Who doesn’t love good, hot churros?

Ingredients
- 1 cup water
- 1 tbsp sugar + extra for dusting
- 1 pinch of salt
- 1 ½ cups all-purpose flour
- 1 large egg
- ½ of a lemon or lime
- 2 cups neutral oil
- ½ tbsp cinnamon
Instructions
- Pour water into a heavy pan, add sugar and salt, bring to a boil over low heat; stirring until dissolved. Remove from heat and beat in flour
- Beat in egg until smooth and satiny, set aside
- Heat 2 inches of oil with lemon or lime until at 375°
- Pour batter into a piping bag with a fluted nozzle, squirt 7.5cm long strips directly into the oil. Be careful not to splash any, it’ll hurt
- Fry for roughly 2 minutes or until golden brown, flipping if stuck. Dry on paper towel, and then roll in a sugar & cinnamon mix.
- Serve hot. Optional but recommended: dip the first ¼ of churro into warm chocolate
